José González — Chef & Entrepreneur

Chef José González, culinary visionary behind Al Mercat Restaurant and consultant to several luxury hotels across Costa Rica, brings his corporate experience and creative spirit to the highlands of Dota.

Originally pursuing a career in law, José discovered his true calling in the kitchen and left law school to study at Le Cordon Bleu Paris, where he earned the prestigious Le Grand Diplôme in both cuisine and pastry.

José spent nearly six years honing his craft across Europe, where he developed a refined approach to gastronomy rooted in technique, sustainability, and respect for local ingredients.

Upon returning to Costa Rica, José opened Al Mercat in San José, before relocating it to the breathtaking Zona de los Santos, where he continues to create dishes inspired by the purity and richness of high-altitude produce. His cuisine reflects his values as an entrepreneur and athlete—fresh, vibrant, and health-conscious, with a focus on balance and authenticity.

After five successful years managing Cedrela Eco Lodge and operating his restaurant in the mountains of Copey, José embraced a new chapter as a homeowner and community member in the region. His connection to the land inspired a new passion—real estate.

Now, as part of CB/VESTA GROUP, José combines his hospitality expertise and deep local knowledge to guide clients in discovering exceptional properties in Dota and beyond. His mission is to provide the insight and warmth of a true local, crafting a property experience that feels both unique and approachable, for those seeking their dream home in the mountains.
